Brie and honey tart

This is a fabulously easy and versatile lunch or starter, with all the virtues of the throw-it-together recipe (which I prefer!). It's particularly good in early autumn when fresh figs are in season.

It can either be made in dainty individual portions for guests, or in one big rustic size, ready to cut.

Ingredients:

One roll of pre-made puff or shortcrust pastry
Brie
Honey
Fresh thyme leave
Melted butter

Options, fresh figs sliced, onion slivers, or any other fruit or veg you like.

Preheat oven to 190C/gas 5. Unroll the pastry and brush with the melted butter. Place slices of brie (around 1/2cm thick) on top, leaving a border of 3cm all the way round. Drizzle honey over and sprinkle on the thyme leaves. Add your figs/onion/other fruit and veg.

Fold over the naked 3cm border of crust to form a parcel-like tart with an open middle. Brush the exposed pastry with egg wash and bake for around 15mins or until the cheese is melted, figs or other fruit have caramelised slightly, and the crust has turned golden.
